Goddess morning Royals 👑. First give praise and worship to the all High.

It is hard right now for everyone. People are scared to cook big meals for the family. They are seeing the leftovers leave the refrigerator and not for the trash. The family is rely on your cooking now and for some it feels good and for others not so good. Well I’m going to help with soups and family meals that will last for a couple of days depending on your household size.

Beans with Smoky Canadian Bacon

  • 2 cans (about 14 oz each) diced fire-roasted tomatoes
  • 1 lb pinto beans soaked, rinsed, and drained
  • 1 pack Canadian Bacon cut into 1/2 inch cubes
  • 1/2 cup Texas-style barbecue sauce (optional) any barbecue sauce will do.
  • 1 onion (optional)
  • 1/2 tsp salt
  • 1/8 tsp red pepper flakes (optional) use black pepper instead
    • Combine all ingredients in a slow cooker or Crock-Pot. Cover, cook on low for 5 to 7 hours.

Wild Rice and Mushroom Casserole

  • 2 tbsp Olive oil
  • 1/2 red onion, finely diced
  • 1 green bell pepper, finely diced
  • 8 oz mushrooms, thinly sliced
  • 1 can (about 14 oz) diced tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tsp drained oregano
  • 1 tsp paprika
  • 2 tbsps butter
  • 2 tbsps unbleached all purpose flour
  • 1 1/2 cups of fat free Milk or Goat Milk
  • 8 oz pepper jack, cheddar, or Swiss, shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups wild rice, cooked according to package instructions
    • Heat oil in large skillet over medium heat. Add onion, bell pepper and mushrooms. Cook and stir 5 to 6 minutes, until vegetable are soft. Add tomatoes, garlic, oregano and paprika; cook until heated through. Transfer to large bowl; let cool.
    • Melt butter in skillet over medium heat; whisk in flour. Cook land stir 4 to 5 minutes until smooth and golden. Whisk in milk. Bring you a boil. Whisk in cheese until melted; season salt and black pepper.
    • Combine wild rice with sauteed vegetables. Fold in cheese sauce and mix gently.
    • Coat slow cooker or Crock-Pot with nonstick cooking spray. Pour in wild rice mixture. Cover; cook on low 4 to 6 hours or on high 2 to 3 hours.

Easy Chicken Noodle Soup

  • 1 can (48 oz) chicken broth
  • 2 boneless, skinless chicken breast, cut into bite-size pieces
  • 4 cups water
  • 2/3 cup diced onion
  • 2/3 cup diced celery
  • 2/3 cup diced carrots
  • 2/3 cup sliced mushrooms
  • 1/2 cup frozen peas
  • 4 chicken bouillon cubes
  • 2 tbsps butter
  • 1 tbsp dried parsley flakes
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried marjoram
  • 1 tsp black pepper
  • 2 cups cooked egg noodles
    • Combine all ingredients except noodles in slow cooker or Crock-Pot. Cover; cook on low 5 to 7 hours or high 3 to 4 hours. Stir in noodles 30 minutes before serving.
