Mini Carnitas Tacos

  • 1 1/2 lbs boneless pork loin, cut into 1″ cubes
  • 1 onion, finely chopped
  • 1/2 cup chicken broth
  • 1 tbsp chili powder
  • 2 tsps ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp minced canned chipotle peppers in adobo sauce
  • 1/2 cup pico de gallo
  • 2 tbsps chopped fresh cilantro
  • 1/2 tsp salt
  • 12 (6″) flour or corn tortillas
  • 3/4 cup (about 3 oz) shredded sharp cheddar cheese (optional)
  • 3 tbsps sour cream (optional)
    • Combine pork, onion, broth, chili powder, cumin, oregano and chipotle peppers in slow cooker or Crock-Pot. Cover; cook on low 6 hours or on high 3 hours or until pork is very tender. Pour of excess cooking liquid
    • Shred pork with two forks; stir in pico de gallo, cilantro and salt. Cover and keep warm on low or warm until serving
    • Cut 3 circles from each tortilla with 2″ biscuit cutter. Top each with pork and garnish with cheese and sour cream. Serve warm

Creamy Duxelles Dip

  • 1 pack (10 oz) cremini or “baby bella” mushrooms
  • 1 tbsp unsalted butter
  • 2 tbsps chopped shallots
  • 2 cloves garlic, minced
  • 1 1/2 tbsps dry Sherry
  • 1 1/2 tsps chopped fresh marjoram
  • 1/8 tsp salt
  • Pinch of black pepper
  • 2 1/2 tbsps crème fraîche
  • 1/2 tbsp grated Parmesan cheese
  • Toasted baguette slices, flat bread or multi-grain crackers
    • Place mushrooms in food processor and pulse until finely chopped
    • Melt butter in large nonstick skillet over medium-high heat. Add shallots and garlic; cook 4 to 5 minutes or until softened, stirring occasionally. Stir in mushrooms and marjoram. Cook 8 to 9 minutes or until all liquid has evaporated and the mushrooms begin to brown, stirring occasionally. Add Sherry, salt and pepper; cook 1 minute.
    • Coat slow cooker or Crock-Pot LITTLE DIPPER with nonstick cooking spray. Add mushroom mixture, crème fraîche and cheese. Cover; heat 1 hour. Stir well and serve with toasted baguette, flat bread or multi-grain crackers.
